Frederike Sonntag studied biology at the Georg August University in Göttingen. She wrote her bachelor thesis at the Johann-Friedrich-Blumenbach-Institute for Zoology & Anthropology on the subject of "“Risikobereitschaft und Handgriffstärke bei Männern". Also, for her Master of Science in Biodiversity, Ecology and Evolution she studied at the Georg-August University in Göttingen. From this point on, she became increasingly interested in plants, so that her main focus was plant physiology and biodiversity. For the master's thesis, Frederike Sonntag collected data in a montane rainforest at the Cerro de la Muerte in Costa Rica. She was particularly interested in changes in the water conductivity within the genus Quercus along the altitude gradient.
As a graduate student she worked on the effect of different potassium fertilization on the fruit quality of tomatoes. The focus of the two-year experiments was to study the influenced by potassium accumulation of carotenoids, phenols, tocopherols, ascorbic acid and sugar and acids. In addition, a metabolism analysis of tomatoes was carried out in 2014 in cooperation with the Max-Rubner-Institute in Karlsruhe. In November 2017 she received her Phd at the Georg-August University in Göttingen.
From May 2018 to June 2019, Frederik Sonntag worked as a postdoc in the Division Quality of Plant Products. Her main task was teaching but she also worked for the FruVaSe project.
From August 2019 to December 2023 she had been working in the Quality and Sensory Analysis Department for Plant Products. Here she studied the effects of UV irradiation on fruits in the post-harvest.
